Ingka Reimages Food Court as Fully Plant-Based and Sustainable

Ingka, a Netherlands-based holding company that operates over 350 IKEA stores, recently unveiled its new sustainable food and beverage concept that serves plant-based food only.

Said to be inspired by sustainable living principles, the new food court concept called Saluhall is named after the Scandinavian-style ‘Market Hall’.

What sets Saluhall apart from conventional food courts is that the menu will be 80% plant-based at launch with the ultimate aim to eventually offer a 100% plant-based menu, in addition to achieving zero waste to landfill and zero single-plastic usage. Vendors at the Saluhall food court will also be required to utilize seasonal and local ingredients, and ensure that their suppliers are practicing ethical and regenerative agriculture.

“We are excited to be unveiling Saluhall, our bold and fresh Nordic take on the food hall concept,” says Ingka Centres’ Commercial and Digital Director, Jens Nielsen. “Our food offering has long been a key element of our meeting places, and with Saluhall we will go beyond dining to inspire the many people with more sustainable food choices, like plant-based dishes”.
