Edible Packaging Material Created by Róza Janusz

Scoby is a bio-based material created by Polish designer Róza Janusz as part of her graduate project at the School of Form in Poznań, Poland.

To create Scoby, a membrane of bacteria and yeast is grown with agricultural waste then fermented in a 25 degrees Celsius room before being placed in moulds. The final result is a material that is edible, impermeable to water, and 100% composable. Scoby also features an oxygen barrier and a microbial barrier.

“The material is compostable and nutritious to our gut or the soil because of its healthy bacteria,” said Janusz. “It is a product of fermentation and has a low pH, which prevents food from wasting.”

“Growing materials has become more and more popular in design, so maybe growing things is closer and easier than we think,” added Janusz.

Designed to package dry and semi-dry food items such as seeds, nuts, and herbs, Scoby can also be used to create trays and bowls.
