Air Protein

Is it possible to create something edible out of thin air? Although seemingly impossible and straight out of science-fiction, California-based startup Air Protein says otherwise.

Founded back in 2019 by Dr. Lisa Dyson, Air Protein states they have developed a method of creating meat out of air. That’s right. The oxygen we breathe every day.

How you may ask? According to Air Protein, air elements are first combined with cultures until protein is produced. This process is said to be similar to how foods such as yogurt, cheese, and wine are made. Next, the protein is harvested, purified and dried, resulting in flour. Said flour is then mixed with culinary ingredients, textures and flavours to recreate the taste, look and texture of real meat.

Rich in vitamins, minerals, amino acids and lacking any soy, hormones, pesticides, herbicides, or GMOs, Air Protein says their air-based meat packs more protein per kg than any other meat source.

“Air Protein has reimagined and redesigned how meat is made and created the most sustainable meat on the planet. Our groundbreaking process is carbon-negative, massively scalable and can happen virtually anywhere on the planet. It’s delicious, nutritionally advanced, and guilt-free,” reads a press release.
